By the end of the tasting you will know the difference between a bloomy rind, a natural rind and everything in between. We will discuss interesting pairing ideas, how to put together a cheese board for a party, proper cheese storage and how to approach a cheese counter.
Mary Connolly is a Montclair native, chef, musician and a blogger known as “Marie Fromage” www.mariefromage.com Mary writes about her passions: travel, music and the food world, with cheese being a particular obsession.
Mary’s love for cheese began at The Cheese Shop of Upper Montclair where she worked as a cheese monger and sandwich maker for five years, many moons ago. She is currently an instructor at The French Cheese Board in New York City.
Mary holds a culinary degree from the French Culinary Institute (now known as the International Culinary Center), a Certificat de Stage from Academie Opus Caseus at MonS Fromager-Affineur (France), a cheese boot camp training certificate from Murray’s Cheese (NYC) and is a member of the American Cheese Society. She also holds a B.F.A. in theater from The Catholic University of America and has professional experience as a singer, caterer, costume designer, public relations professional and executive assistant.
